Homemade Soft Pretzels Recipe

Pretzels remind me of when I was in college. Every time I passed by this pretzel’s store the smell of fresh baked goods, mixed with cinnamon and sugar, made me craving for some. And would buy one, if my wallet allowed me to, and went all the way home eating it.

But I never tried to bake it. Not that I’ve never tried to ask for the recipe, but I just thought it would be too hard and time-consuming. Until I saw someone doing a homemade soft pretzels recipe on TV. My mom was fascinated by the way you should dunk it on water before putting it to bake, and as I had some free time and all the ingredients, I thought I should give it a try.

This baking soda bath is what gives the pretzels that crunchiness on the outside. It’s the kind of trick that I’ve never heard about, and being honest, I thought it had ruined my recipe. But luckily I was wrong.

Oh boy, I couldn’t be happier with the results. They came out crunchy on the outside, soft on the inside, perfectly cooked. I couldn’t resist to cover it with butter, cinnamon and sugar. I almost burned my tongue but was worth it. If you like it salty, you can totally add some coarse salt on it!

Homemade Soft Pretzels

Ingredients

  • 1 pack active dry yeast
  • 1 cup warm water
  • 4 tbsp melted butter 1 for the dough, 3 for coating
  • 1 tsp sugar
  • 1 tsp salt
  • 3 cups flour may need a little more
  • 2 cups water room temperature
  • 4 tbsp baking soda
  • Your desired topping sugar, cinnamon, coarse salt

Instructions

  • Mix all the yeast with the warm water and sugar. Let it rest until it forms some kind of a foam, like beer foam (it might take 5 to 15 minutes)
  • Add 1 tbs of melted butter and salt.
  • Add one cup of flour at a time and keep mixing it until all the dough stops sticking to your hands and to your bowl. If 3 cups are not enough, you can add a little bit more until you get the desired consistency.
  • At this point, the dough should bounce back when you press it lightly.
  • Now it's time to knead it. You can use your hands or a standing mixer with a dough hook. It needs to be soft, playable and smooth.
  • Let it rest for 15 minutes.
  • While it is resting, boil 2 cups of water and add the baking soda. Mix it until it all dissolves and pour it into a baking dish. Let it cool down a little bit.
  • Pre-heat your oven on high heat (250C - 475F)
  • Now the dough is ready to be shaped! You can do it the way you want to. At first, they will not look pretty good, but as you continue playing with it, they will look perfect.
  • When your shapes are done, pick the pretzels carefully and put them into the water mixture. Leave it for 30 seconds and put it right into your baking sheet with parchment paper. Don't let them stay too much on the water bath or they will taste bitter.
  • If you want to add the coarse salt, you have to sprinkle it now.
  • Put them into the oven and let it bake for 8-9 minutes, or until they are golden brown.
  • While they are baking, melt the rest of the butter. When the pretzels are ready, let them cool down a little (until you can touch it without burning yourself) and coat it with some butter and a mixture of sugar and cinnamon, if you want it sweet.
